Breakfast Cheesecake

I'm 99% sure that prepping this breakfast the night before will make you excited for the next morning when you get to eat it!

This brekkie cheesecake packs a decent hit of protein, to help keep us satiated and energised for the morning, as well as some carbs, healthy fats and colour from the berries - ticking all the nutritional boxes. Oh, and it's DELICIOUS!

I've had this on repeat over the last while...Honestly, having something prepped has been a godsend both with fitting a decent brekkie in around the little man, as well as the odd morning I get some training in!

 


Serves 1


Ingredients


  • 2-3 Weetbix (gluten free if required)

  • Around 1/4 cup milk

  • 1 teaspoon maple syrup

  • 1/4 cup cottage cheese*

  • 1 heaped tablespoon chocolate protein powder*

  • 1 teaspoon cocoa powder

  • Berries/sliced banana/fruit, nuts/nut butter to top

Method


  • Crush Weetbix and add them to a serving bowl.

  • Pour the milk and maple syrup onto the Weetbix and give a stir around - you want it to be a bit soggy but not swamped in liquid.

  • In a separate bowl, combine the cottage cheese, protein powder and cocoa - I sometimes add a little milk to this to loosen the mixture slightly.

  • Spread the cottage cheese mixture over the weetbix, cover and refrigerate for a couple of hours or overnight.

  • In the morning add your fruit and nuts to the top and high five last nights you for prepping yourself such a delicious meal to start your day!


Notes


  • I always use full fat cottage cheese - I prefer the texture and it just tastes better in my opinion!

  • Can sub cottage cheese for 1/2 cup Greek yoghurt.

  • You don't have to use chocolate flavour protein powder, any flavour would work - just don't add the cocoa.

  • Although not pictured (I was out of PB), I usually add a drizzle of peanut butter and some chopped nuts to the top for extra flavour, crunch and healthy fats.
