This slice makes a great on the go snack with your morning or afternoon brew! Packed with fibre, protein and healthy fats from all the yummy nuts, it will help bridge that gap between meals as well as satisfy that sweet craving. Sweetened with honey, it contains no added sugar and is also dairy and gluten free.
Ingredients
2 cups mixed nuts and seeds - whatever you like
2 tablespoons oat OR almond flour (ground up oats or almonds)
1 teaspoon cinnamon
1/2 teaspoon salt
1/2 cup coconut oil - can sub for butter
1/4 cup nut butter
1/4 cup honey
1 teaspoon vanilla essence
2 eggs - lightly beaten
Method
Preheat oven to 180 degrees and line a slice tin with baking paper (mine was 8x8 inches).
Roast the nuts and seeds by microwaving for 2 minutes, give them a shake and continue to cook in 1 minute increments until lightly roasted. Roughly chop.
Add the roasted nuts to a large bowl with the almond or oat flour, cinnamon and salt. Mix around to combine.
In a separate bowl, melt the coconut oil (or butter), nut butter, honey and vanilla essence and give it a stir.
Stir the beaten eggs into the nut mixture, then add the wet ingredients and combine.
Pour the mixture into your prepared tin and bake for 25-30 minutes, until golden brown.
Slice when cool and keep in an airtight container for up to 5 days.
Notes
1/2 a cup of coconut would be a nice addition, add this when combining the dry ingredients.
You could top this slice with a drizzle of dark chocolate, I would have but didn't have any!
