These delightful little balls are full of goodness on the inside, and a little bit of what's good for the soul on the outside!
Ingredients
1 cup rolled or quick cook oats
1 cup raw, unsalted nuts - almonds, cashews, walnuts, peanuts...whatever you like
10 dates
1 heaped tablespoon honey or maple syrup
2 heaped tablespoons natural peanut butter
3 tablespoons melted coconut oil
1 tablespoon flax seed or chia
¼ teaspoon salt
1-2 tablespoons milk to loosen if required
Melted chocolate - optional but yum!
Method
Roast the nuts by adding to a microwave safe bowl and microwaving for 90 seconds. Give them a shake and microwave for a further 30-60 seconds. This step isn't essential, but adds to the flavour.
Add half the nuts, 4 dates and all remaining ingredients to a food processor and blitz to combine. Add enough milk to get the mixture to a ‘rollable’ consistency.
Chop the remaining nuts and dates and stir into the mixture.
Roll mixture into balls, golf ball size or slightly smaller.
For the optional chocolate coating (I used Caramilk), dip the balls into the melted chocolate (I used 2 spoons), then place on a baking paper lined tray and pop into the refrigerator to set.
Store balls in the fridge.
