Overnight Weetbix

Want cheesecake for breakfast, but also want to kickstart your day with something nutritious? This recipe is for you!

This brekkie contains good dose of protein keep you fuelled, carbs for energy, some healthy fats and is deeeee-lish...Top with some colour in the name of fruits and you've got yourself one damn near perfect breakfast!

Grab that box of Weetbix from the pantry and get ready to create some magic my friend!


Ingredients


Please use these quantities as a guide and adjust to your own energy requirements - we are all different!


2 Weetbix

1/2 cup milk

Pinch of salt

1 teaspoon pure maple syrup or honey

1/2 cup yoghurt

Scoop of protein powder (optional)

Fruit + nuts to serve

 





1. Crush Weetbix and place in a bowl. Add salt and maple syrup or honey, then cover with milk.










2. Mix protein powder (if using) with yoghurt, then spread on top the Weetbix mixture.











3. Refrigerate overnight then top with fruit and chopped nuts before enjoying a super yummy and satisfying breakfast!






 

Get creative with this one! I've tried it with banana layered between the Weetbix and yoghurt which was also very good. Play around with yoghurt flavours and toppings too.

The protein powder is not at all essential. If you choose a higher protein yoghurt such as Greek or the Anchor high protein one, you're still getting a decent amount in your brekkie - I'd just add a bit more to bump up the protein content. You could add a little maple to sweeten the yoghurt if you don't like it so tart, or add that banana - yum!
