Kumara Blondies

Kumara, such an overachiever in the veggie world...Delicious mashed, roasted, as fries AND baked into a delicious dessert as I'm about to show you!

Meet the brownie's paler counterpart - the Blondie!

This a recipe is a yummy way of sneaking a bit more veg and fibre into your day and as the kumara is naturally sweet, it minimises the amount of added sugar required.

But please don't get lost on the health benefits, this blondie is seriously divine. Dense, gooey and everything you want in a comforting dessert or arvo treat - without the sugar crash. Let's get baking!

 
 

Ingredients


  • 3/4 cup cooked red kumara (see notes)

  • 1/4 cup greek yoghurt or applesauce

  • 1/3 cup maple syrup or honey

  • 2 tablespoons hot water

  • 1 heaped spoonful peanut butter

  • 1/2 cup flour (see notes)

  • 1/2 cup vanilla protein powder OR sub for flour OR cocoa for chocolate flavour

  • 1.5 teaspoons baking soda

  • Large pinch of salt

  • Handful of chocolate chunks (optional)


Method


  • Preheat oven to 180 degrees and line a deep slice tin with baking paper - 8X8 size as a guide.

  • Place cooked kumara, yoghurt or applesauce, maple syrup, water and peanut butter in a food processor and blend until smooth.

  • Add all remaining ingredients apart from chocolate chunks and process until combined.

  • Fold chocolate chunks into batter, if using.

  • Spoon batter into the prepared pan and bake for 20-25 minutes, until firm on top but still soft in the centre. Baking time will depend on how gooey you like your blondie - I go with less time and a smaller pan as I like my treats on the lesser baked side 😉

  • Allow to cool in the pan before slicing. I cut mine into 8, but I'm notorious for eating 2 in a sitting...Let your heart guide you on the size of your slice!

  • Store in the fridge for up to 5 days.


Notes


  • I roasted my kumara whole and peeled when cooked, but you could steam or microwave.

  • Use any kind of flour, I have used buckwheat as a gluten free alternative and it worked perfectly.

  • Protein powder is entirely optional, please swap this for more flour if you don't want to use. Or swap it for cocoa powder to turn this blondie into a brownie!
